Authentic Chicken Enchiladas Recipe

Equipment:

Ingredients:
- 2 tbsp avocado oil
- 1 large white onion, diced
- 1 rotisserie chicken, shredded
- 1 (4.5 oz) can diced green chilies
- Sea salt (to taste)
- Black pepper (to taste)
- 1 (16 oz) can black beans
- 8 large flour tortillas
- 3 1/2 cups Mexican-blend shredded cheese
- 1 large can red enchilada sauce
- For Garnish: Chopped cilantro, Chopped red onion, Sour cream, Chopped jalapeño pepper

Instructions:
- Preheat oven to 350°F (175°C). Grease a casserole dish.
- Make Filling: Heat avocado oil in a large sauté pan over medium-high heat. Add diced onion and sauté for 4 minutes, stirring occasionally. Once onions are slightly softened, add shredded chicken and green chilies. Liberally season with salt and pepper. Sauté for 4 more minutes. Stir in black beans until fully combined. Remove from heat and set aside.
- Assemble Enchiladas: Set up an assembly line with tortillas, enchilada sauce, chicken/bean mixture, and cheese. For each enchilada:
- Lay out a tortilla.
- Spread 2 1/2 tablespoons enchilada sauce over it.
- Place a generous spoonful of chicken mixture down the center.
- Sprinkle with about 1/3 cup cheese.
- Roll up tightly and place seam-side down in the greased dish.
- Repeat with remaining 7 tortillas.
- Top & Bake: Spread remaining enchilada sauce over the top of the rolled enchiladas. Sprinkle with remaining cheese. Bake for 20 minutes, or until cheese is melted and bubbly.
- Serve: Garnish baked enchiladas with sour cream, chopped red onion, cilantro, and jalapeño pepper as desired.
