Authentic Chicken Enchiladas Recipe​​

Equipment:​​

  • Non-stick sauté pan
  • Baking dish

Ingredients:​​

  • 2 tbsp avocado oil
  • 1 large white onion, diced
  • 1 rotisserie chicken, shredded
  • 1 (4.5 oz) can diced green chilies
  • Sea salt (to taste)
  • Black pepper (to taste)
  • 1 (16 oz) can black beans
  • 8 large flour tortillas
  • 3 1/2 cups Mexican-blend shredded cheese
  • 1 large can red enchilada sauce
  • For Garnish:​​ Chopped cilantro, Chopped red onion, Sour cream, Chopped jalapeño pepper

​Instructions:​​

  1. Preheat oven to 350°F (175°C). Grease a casserole dish.
  2. ​Make Filling:​​ Heat avocado oil in a large sauté pan over medium-high heat. Add diced onion and sauté for 4 minutes, stirring occasionally. Once onions are slightly softened, add shredded chicken and green chilies. Liberally season with salt and pepper. Sauté for 4 more minutes. Stir in black beans until fully combined. Remove from heat and set aside.
  3. ​Assemble Enchiladas:​​ Set up an assembly line with tortillas, enchilada sauce, chicken/bean mixture, and cheese. For each enchilada:
    • Lay out a tortilla.
    • Spread 2 1/2 tablespoons enchilada sauce over it.
    • Place a generous spoonful of chicken mixture down the center.
    • Sprinkle with about 1/3 cup cheese.
    • Roll up tightly and place seam-side down in the greased dish.
    • Repeat with remaining 7 tortillas.
  4. ​Top & Bake:​​ Spread remaining enchilada sauce over the top of the rolled enchiladas. Sprinkle with remaining cheese. Bake for 20 minutes, or until cheese is melted and bubbly.
  5. ​Serve:​​ Garnish baked enchiladas with sour cream, chopped red onion, cilantro, and jalapeño pepper as desired.
