Pan-Seared Steak

Ingredients:
Sirloin steak: 200g
Butter: 50g
Rosemary: 20g
Garlic: 20g
Freshly ground black pepper: 2 teaspoons
Sea salt: (optional, to taste)
Cooking Instructions:
1.Thaw and Bring to Room Temperature: Place the vacuum-sealed frozen sirloin steak at room temperature for about 30 minutes until it’s close to room temperature. Then, open the packaging and remove the steak. Note that the reddish liquid in the bag is natural juices and myoglobin, not blood.
2.Prepare the Steak: Pat the steak dry with paper towels to prevent moisture from affecting the texture. Slice the steak into pieces at least 2.5 cm (1 inch) thick. This thickness helps ensure you can achieve a perfect rare, medium-rare, or medium steak with a juicy interior, depending on your preference.
3.Simple Seasoning: Season the steak simply with freshly ground whole black peppercorns and coarse sea salt. Using a grinder for whole peppercorns is recommended to enhance the steak’s aroma and preserve its natural flavor. Avoid over-marinating with too many sauces.
4.Heat Pan and Oil: Heat a heavy-bottomed frying pan (one that retains heat well) over high heat. Add a small piece of butter to the pan. Once the butter starts smoking, add the steak to begin searing. For optimal taste and texture, the steak’s surface needs to reach a high temperature quickly. This is why you wait for the oil to smoke before adding the steak, allowing it to reach over 100°C (212°F) in just a few seconds.
5.Control Heat and Time: While the steak’s surface has reached 100°C (212°F), the internal temperature isn’t high enough yet. If you continue searing on high heat, the surface will burn. At this point, reduce the heat to low and continue cooking until the internal doneness reaches your desired level. Control the cooking time based on your preferred doneness. You can judge doneness by experience, using a meat thermometer, or by touch. For example, a 2-3 cm (0.8-1.2 inch) thick steak typically takes 3-4 minutes to reach medium-rare.
6.Add Flavorings: About 2 minutes before the steak is done, add one or two more pieces of butter, garlic, and rosemary to the pan for added flavor. Sprinkle an appropriate amount of sea salt on both sides of the steak (optional, to taste). Then, use the garlic to spread the melted butter over the steak, allowing it to fully absorb the flavors.
7.Rest the Steak: Once the steak is cooked to your desired doneness, place it in a warm spot or a 60°C (140°F) oven to rest for 5 minutes.
